Quality Management And R&D Process
Product quality and food safety are the highest priorities at Great Lakes Cheese. Our strict HACCP food safety program (based on the IDFA model) enforces preventative measures to assure pathogen-free products. Everything is tested, monitored, and reported for audit, including: Raw materials suppliers, cheese production, work areas, air quality, etc. Our facilities are USDA-certified with bi-annual inspections. Additionally, we engage Silliker, Inc. (the noted independent auditor) to give each of our plants a yearly audit on food safety. In 2005 our steadfast commitment to food safety and superior quality earned us the Silliker Audit Platinum Award.
Our R&D is a continuous process. A full time staff of food scientists and technicians develop customized cheese products, innovative new applications of cheese products, and improvement of production technologies. We also offer customer education in cheese technology, functionality, and flavor profiling. Our motto: "Cheese is our World."
