Strawberry and Blue Cheese Salad

Ingredients
For The Dressing
½ shallot, quartered
1 tsp. garlic, minced
½ tbsp. Dijon mustard
1 tbsp. honey
kosher salt to taste
pepper to taste
¼ cup red wine vinegar
¼ cup strawberries
¼ cup candied walnuts
½ cup canola oil
For The Salad
1 chicken breast, gilled, cut into chunks (optional)
½ lbs. mixed baby greens
Pecans
¼ cup your brand blue cheese, crumbled
1 cup strawberries, quartered
Instructions
For The Dressing
Put all ingredients except canola oil in a blender. Turn on low until well blended. Add canola oil and blend on low until well mixed. Refrigerate.
For The Salad
Place greens in large salad bowl (or individual plates). Add strawberries and pecans. Sprinkle with blue cheese and drizzle dressing over.
